This potent mix of liqueurs is wonderful for pouring over Christmas Cakes and puddings to keep them moist and fresh all through the Festive Season.  It is not really for drinking, unless you are particularly brave, however it is magical in Christmas Fudge and ensures you have a wonderfully flavoursome, fresh and slightly special taste to your Christmas cakes.  Our family has been making it for at least 25 years, and every year I am pleasantly reminded of it's wonderful flavour and warmth as I combine the flavours.  This recipe makes a litre, which is more than enough for the whole festive season!


200mls Brandy
200mls Bourbon, Sherry, or Marsala (or Missipippi Moonshine if you can find it)
200mls cherry preserving juice (from a bottle of maraschino cherries)
100mls Cointreau
100mls Kirsch
100mls Cherry Wine
50mls Amaretto, Frangelico or Licor de Avellanas (Hazelnut liqueur)
50mls Orahorvac Walnut liqueur (magical stuff!)
1 vanilla pod, split
3 whole allspice
1 star anise
4 cloves
Piece of nutmeg (the little piece always left from grating a nutmeg seed)


Decant all liquids into a bottle or vessel which has a very secure seal.

Add the vanilla pod and shake well to release the seeds from the pod.  Add the spices, seal and leave in the pantry for at least 2 weeks before using.  The longer it is stored the more intense the spice flavours.

Despite the cosmic volume of alcohol, the flavour is actually rather soft and warm, not as throat pickling as you may suspect.
