Cauliflower Fitters

This is a great vegetarian alternative to bread rolls with your next dinner or soup.  This recipe can be made gluten free as well, and I have not added cheese to the batter – just as a topping to give a golden crust – so it is not that important to the flavour, that makes this a pretty healthy little flavour ball!

Adding saffron, however is really a must as it gives that nutty honeyed flavour that goes well with cauliflower.

Cauliflower Fritters1 whole cauliflower
3 cloves of garlic, crushed
3 spring onions
1 zucchini, finely grated
1 cup spelt flour, oat flour or light rye flour
2 eggs
½ cup milk or stock
Generous pinch of saffron, in a tablespoon of hot water
2 tablespoon pinenuts
Juice and zest of half a lemon
½ teaspoon each of : chopped sage, thyme, parsley, cumin, caraway seeds, ground fennel and fennel seeds
Salt and pepper to taste
A little grated cheese (optional)

Preheat oven to 200°C

Cut the cauliflower into florets – not too small, you want to keep some of the 'cauliflowerness' of the florets.
Steam the cauliflower until just tender. 

While the cauliflower is steaming, prepare the batter. 

Place all the ingredients in a bowl and whisk together just enough to make a thick batter.

Once the cauliflower is steamed, add the to batter and turn it quickly through.
Add a teaspoon of olive oil to the pans of a muffin tray and add generous mounds of the cauliflower mixture to the tray.

Top with a little (optional) cheese, just enough to make the tops crispy.
Bake in a hot oven for about 20 minutes or until golden brown on top.

These also taste brilliant made with added bacon – naughty but definitely delicious, and I am sure there are those who would advocate the addition of chilli....
