Caramel Fudge

I promise I'll stop with the fudge soon...it's just such a lovely easy thing to make and share!

1 can of condensed milk

120 grams of butter

50 grams white chocolate

2 tablespoons golden syrup

½ cup dark brown sugar

½ teaspoon of cream of tartar

2 tablespoons of Butterscotch Scnapps

2 tablespoons of coffee crystal sugar

Over a low heat, melt the butter and golden syrup and sugar  with the condensed milk. 

Add the cream of tartar and bring to a rolling boil until the sugar completely dissolves.  Whisk for about 5 minutes, or until the mixture starts to thicken, do not allow the mixture to catch on the base of the pan.

Remove from the heat add the chocolate and schnapps and  mix until smooth and glossy.   

Pour the fudge mixture into a lined baking tray and sprinkle over the crystallised sugar.

Refrigerate for at least an hour, or until firm.

Cut into mouthful-sized pieces and serve with lots of strong coffee.
